Time for a change
Sometimes we get stuck in a rut. I like to cook but when work gets busy I tend to trust to the old faithfuls: pasta dishes, baked fish or meats served with steamed vegetables, hearty soups, and my trusty crock pot. This week, as a three-month project finished, and I anticipate beginning a new contract that should run to early Spring, I decided to try something new. It was tasty and I think worth sharing here.
As you'll note, this is not a recipe of my own. I recently cut it out of a magazine or flyer, and I can't recall which one. However, I did alter it a tad.
* I sliced up three large chicken breasts into small pieces, which I sprinkled with Italian seasoning and drizzled with lemon juice.
** I replaced the garlic salt, which I don't stock, with minced fresh garlic and ground in a dash or two of salt.
Plus I threw in half a red pepper, sliced. And I used equal measures of tomatoes and coconut milk (one tin each).
Give it a try. And don't forget that it takes as much time to try something new as it does to stick to the old. Change is good!
